Rice Pie

  • Preheat oven to 350 degrees
  • 2 pie crusts
  • 1 1/2 lbs. of ricotta
  • 1 bag of Success Rice
  • citron, small piece, minced
  • sugar: start with 1/2 cup; add more to taste
  • 1 tsp. cinnamon
  • 1 tsp. real vanilla extract
  • zest from 1 small orange
  • zest from 1 lemon
  • 1 tsp. lemon extract
  • 3 eggs, beaten
  • You can adjust the flavor to your taste. Mix together all the above ingredients by hand. Pour batter into homemade or frozen pie crust (deep dish, 9 inches). Bake at 350 degrees. Check after 30 minutes. If the center is wet or jiggles when the pie is moved, continue to bake. Check frequently. The pie is done when the center does not jiggle. Serve cold to bring out the flavor.
